I have finally, finally managed to make successful bread here.  The altitude and dryness have presented problems, but perseverance and experimentation have paid off:

  1. Ooh, that’s gorgeous.

    It’s funny that I read this just after I put my bread in the oven. It’s a gluten free challah loaf, so we’ll see how it turns out. So far all of my experiments have been minor to epic fail. The whole “lack of gluten” thing is an obnoxious factor in making bread, but at least I don’t have to knead it, I guess.

  2. gluten is rather key to it. and kneading is rather enjoyable. i just have no love of gluten-free anything. gluten, to me, is a wonderful thing, and allergies are silly.
